The Food Safety Department in Dubai Municipality clarifies the truth behind that the clip recently published on social media claiming the use of liquid nitrogen in food processing and ice cream production. This issue has been raised years ago, and it should be noted that Nitrogen gas is not toxic. Nitrogen is artificially made by distillating it to turn into a very cold liquid. Later on, it’s used for an immediate preparation of ice cream, where the ingredients, such as liquid milk and sugar, are added to a bowl with liquid nitrogen to make ice cream. It’s also used as a promotional tool to attract customers as Nitrogen evaporates as soon as it is released from the storage container. Nitrogen does not cause any harm as opposed to what was stated in the video about adding Nitrogen gas is added to Ice cream. Sellers are aware of this and offer ice cream to the consumer when all of the Nitrogen evaporates, and this process is as safe as any other food preparation done by licensed food organizations.
